- 1 1/2 pounds ground beef
- 1 cup breadcrumbs
- 1/2 cup milk
- 2 large onions
- thinly sliced
- 2 cloves garlic
- minced
- 1 egg
- beaten
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter
- 1/4 cup beef broth
- 1 cup shredded Gruyère or Swiss cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, melt butter over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized, about 15-20 minutes. Add minced garlic in the last 2 minutes of cooking.
- In a large bowl, combine ground beef, breadcrumbs, milk, beaten egg, Worcestershire sauce, Dijon mustard, thyme, salt, pepper, and half of the caramelized onions. Mix until just combined.
- Transfer the meat mixture into a loaf pan and shape it into a loaf.
- Deglaze the skillet with beef broth, scraping up any bits from the onion cooking. Pour the deglazed mixture over the meatloaf.
- Bake in the preheated oven for 30 minutes. Top with remaining caramelized onions and shredded cheese, then return to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
- Let rest for 10 minutes before slicing. Serve warm.
Notes
For extra flavor, you can add some chopped fresh parsley or serve with a side of mashed potatoes.
