Ingredients
- Fresh figs (about 8-10 medium figs / 450-500g)
- Unsalted butter (8 tablespoons / 115g)
- Granulated sugar (½ cup / 100g)
- All-purpose flour (1 ½ cups / 190g)
- Baking powder (1 ½ teaspoons)
- Salt (½ teaspoon)
- Large egg (1)
- Whole milk (¾ cup / 180ml)
- Vanilla bean (1 pod)
- Brown sugar (1/3 cup / 65g)
- Lemon juice (1 tablespoon)
Instructions
- Preheat the oven to 350°F (175°C). Grease a round cake pan.
- In a skillet, melt the unsalted butter over medium heat until it turns golden brown and smells nutty. Remove from heat.
- Pour half of the browned butter into the prepared cake pan, spreading it evenly.
- Sprinkle the granulated sugar over the butter in the pan. Arrange the halved figs on top, cut side up.
- In a mixing bowl, whisk together the flour, baking powder, and salt.
- In another bowl, combine the remaining brown butter, brown sugar, large egg, whole milk, vanilla seeds, and lemon juice. Mix until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter over the figs in the pan, spreading it evenly.
- Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool for 10 minutes, then invert onto a serving plate. Enjoy!
