- 1 (15 ounce) can refried beans
- 3 5.3 oz containers or 2 cups plain yogurt
- 1 (1 ounce) packet of taco seasoning
- 2 medium avocados
- 2–3 tablespoons chopped cilantro
- 1 jalapeño
- seeded and diced
- ½ lime
- juiced
- Salt & pepper to taste
- ½ cup shredded cheddar or Mexican cheese
- 1 ½ cups quartered grape tomatoes
- ¼ cup sliced black olives
- 2 tablespoons finely diced red onion or green onion
- ½ cup chopped fresh cilantro
- Optional: jalapeño slices
Instructions
- Start by layering the refried beans evenly on the bottom of a serving dish.
- In a bowl, mix the yogurt with the taco seasoning and layer it over the beans.
- For the guacamole, mash the avocados and mix in chopped cilantro, diced jalapeño, lime juice, salt, and pepper. Spread this on top of the yogurt layer.
- Sprinkle shredded cheese evenly over the guacamole.
- Add a layer of quartered grape tomatoes followed by sliced black olives.
- Top with diced red or green onions and chopped fresh cilantro.
- Add optional jalapeño slices for extra heat, if desired.
- Serve with tortilla chips and enjoy!
Notes
For a spicier dip, leave the seeds in the jalapeño. This dip can be made a few hours in advance; just cover and refrigerate until serving.
