- 18–24 medium peaches
- 3 cups of honey
- 9 cups of water
- lemon juice (optional)
Instructions
- Prepare your jars by sterilizing them in boiling water.
- Peel and slice the peaches, removing the pits, and pack them into the sterilized pint jars, about 3-4 peaches per jar.
- In a large pot, combine honey and water, and bring to a gentle boil to create the syrup.
- If using, add lemon juice to the syrup mixture.
- Pour the hot syrup over the peaches in the jars, filling to about 1/2 inch from the top.
- Seal the jars with lids and process them in a canner for about 30 minutes to ensure they are properly sealed.
- Allow the jars to cool completely before storing them in a cool, dark place.
Notes
Adjust the amount of water to your taste preference for a thicker or thinner syrup.
