Ingredients

  • 3 cups of honey
  • 9 cups of water
  • lemon juice (optional)

Instructions

  1. Prepare your jars by sterilizing them in boiling water.
  2. Peel and slice the peaches, removing the pits, and pack them into the sterilized pint jars, about 3-4 peaches per jar.
  3. In a large pot, combine honey and water, and bring to a gentle boil to create the syrup.
  4. If using, add lemon juice to the syrup mixture.
  5. Pour the hot syrup over the peaches in the jars, filling to about 1/2 inch from the top.
  6. Seal the jars with lids and process them in a canner for about 30 minutes to ensure they are properly sealed.
  7. Allow the jars to cool completely before storing them in a cool, dark place.
