- 1 (14.1 ounce) package double-crust pie pastry

Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, mix the white sugar and flour.
- Add the freshly chopped rhubarb to the mixture and stir until well combined.
- Place one pie crust in a 9-inch pie dish and fill it with the rhubarb mixture.
- Dot the filling with small pieces of butter.
- Cover with the second pie crust, seal the edges, and cut slits for steam to escape.
- Bake for 30-35 minutes or until the crust is golden brown and the filling is bubbly.
- Let it cool before serving.
