  • 2 teaspoons cornstarch
  • 1 cup all-purpose flour
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter
  • chilled and cut into small pieces
  • ¼ cup boiling water
  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine sliced peaches, ¼ cup white sugar, ¼ cup brown sugar, ground cinnamon, ground nutmeg, lemon juice, and cornstarch. Toss to combine.
  3. Pour the peach mixture into a greased baking dish.
  4. In another bowl, mix flour, ¼ cup white sugar, ¼ cup brown sugar, baking powder, and salt.
  5. Cut in the chilled butter until the mixture resembles coarse crumbs.
  6. Stir in boiling water until just combined.
  7. Drop spoonfuls of the batter over the peaches.
  8. Sprinkle with 3 tablespoons sugar and 1 teaspoon cinnamon on top.
  9. Bake for 30 minutes or until the topping is golden brown and the peaches are bubbly.
  10. Let cool slightly before serving.
