  • 2 tablespoons flour

  • 2 large egg yolks
  • ½ cup flour
  • ½ cup unsweetened cocoa powder
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup butter melted
  • ¾ cup sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a mixing bowl, combine the canned pumpkin, cinnamon, ginger, nutmeg, ¼ teaspoon salt, mascarpone cheese, cream cheese, ¾ cup sugar, flour, vanilla extract, and egg yolks. Beat until smooth.
  3. In another bowl, whisk together the flour, cocoa powder, baking powder, and ½ teaspoon salt.
  4. In a large bowl, mix the melted butter and ¾ cup sugar. Add eggs and vanilla, mixing well. Gradually add the dry ingredients until fully combined. Stir in chocolate chips.
  5. Spread half of the brownie batter into the bottom of the prepared pan. Spoon the pumpkin cheesecake mixture over the brownie layer and then dollop the remaining brownie batter on top.
  6. Use a knife to swirl the mixtures together gently.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  8. Allow to cool before cutting into squares and serving.

Notes

For extra flavor, consider adding a splash of maple syrup to the cheesecake layer. Make sure not to overbake to keep the brownies fudgy.
