  • 4 lbs boneless, skinless chicken breasts
  • 6 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • ½ cup unsalted butter, melted
  • ¼ cup fresh parsley, chopped
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon red pepper flakes, optional
  • Salt and pepper, to taste
  • ½ cup low-sodium chicken broth
  • 3 lbs russet potatoes, peeled and quartered
  • 1 cup whole milk
  • ½ cup sour cream
  • ¼ cup unsalted butter
  • Salt and freshly ground black pepper, to taste
  • ½ cup chopped chives, optional

Instructions

  1. Peel and quarter the potatoes. Place them in a large pot, cover with cold water, and add a pinch of salt.
  2. Bring to a boil and cook for 15–20 minutes, until fork-tender.
  3. Drain the potatoes and return them to the pot. Let them steam for a couple of minutes.
  4. Add the milk and ¼ cup butter. Mash until smooth and creamy, then season with salt and pepper. Keep warm.
  5. Preheat the oven to 400°F (200°C).
  6. Season the chicken breasts with salt, pepper, and garlic powder.
  7. Heat 2 tablespoons olive oil in a large oven-safe skillet over medium heat. Sear the chicken for 5–6 minutes per side, until golden brown.
  8. Remove the chicken and set aside. Add the minced garlic to the skillet and sauté for about 1 minute.
  9. Pour in the chicken broth and scrape the bottom of the skillet to deglaze.
  10. Return the chicken to the skillet and sprinkle generously with Parmesan cheese.
  11. Transfer the skillet to the oven and bake for 15–20 minutes, or until the chicken reaches 165°F (75°C).
  12. Serve the creamy mashed potatoes on plates and top with the garlic Parmesan chicken.
  13. Drizzle with the remaining skillet sauce and garnish with fresh parsley or chives.
