Ingredients

  • 2 tablespoons (30 ml) olive oil
  • 2 tablespoons (28 grams) butter
  • 30 garlic scapes
  • sliced
  • ½ teaspoon fine sea salt
  • plus more for the pasta water
  • Juice of 1 lemon
  • about 3 tablespoons/(45 ml)
  • ½ cup 2 ounces/(60 grams) grated parmesan cheese
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Cook the spaghetti in salted boiling water according to package instructions until al dente. Drain and reserve some pasta water.
  2. In a large skillet, heat the olive oil and butter over medium heat until melted. Add the sliced garlic scapes and sauté for about 5 minutes until tender.
  3. Stir in the cooked spaghetti, fine sea salt, lemon juice, and grated parmesan cheese. Mix well, adding reserved pasta water as needed to create a creamy sauce.
  4. Finish with freshly ground black pepper and adjust seasoning to taste. Serve immediately.

Notes

For added flavor, consider topping with crushed red pepper flakes or fresh herbs. Garlic scapes can also be substituted with garlic cloves if unavailable.
