Ingredients
2 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon allspice
1/2 teaspoon salt
1/4 teaspoon ground cloves
3/4 cup unsalted butter
room temperature
3/4 cup packed dark brown sugar
1 large egg
1/2 cup unsulfured molasses
1/3 cup finely diced candied ginger (optional)
1 cup granulated sugar
for rolling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, cinnamon, ginger, allspice, salt, and cloves.
- In a large mixing bowl, cream the unsalted butter and dark brown sugar until light and fluffy.
- Beat in the egg and molasses until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the candied ginger if using.
- Roll the dough into balls and then roll each ball in granulated sugar before placing them on the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are set but the center is still soft. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
