Description

Indulge in these deliciously soft and fluffy glazed yeast doughnuts, perfect for breakfast or a sweet treat any time of the day.


Ingredients

Scale
  • ¾ cup scalded milk
  • ⅓ cup granulated sugar
  • ¼ teaspoon salt
  • 1 (.25 ounce) envelope active dry yeast
  • ¼ cup warm water
  • 4 cups sifted all-purpose flour
  • 1 teaspoon freshly grated nutmeg (Optional)
  • ⅓ cup butter or margarine
  • 2 eggs
  • beaten
  • oil for deep frying
  • 2 cups confectioners’ sugar
  • 6 tablespoons milk

Instructions

  1. In a large bowl, combine the scalded milk, sugar, and salt. Allow to cool to lukewarm, then sprinkle the yeast over the warm water and let sit for 5 minutes.
  2. Once the yeast is bubbly, combine it with the milk mixture. Add the flour, nutmeg (if using), and melted butter, followed by the beaten eggs. Mix until a soft dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm spot until doubled in size, about 1 hour.
  4. Punch down the dough and roll out to about ½ inch thick. Cut into doughnut shapes and place on a floured baking sheet. Allow to rise again for 30 minutes.
  5. Heat oil in a deep fryer or large pot to 375°F (190°C). Fry the doughnuts until golden brown, about 1-2 minutes per side. Drain on paper towels.
  6. For the glaze, whisk together confectioners’ sugar and milk until smooth. Dip the warm doughnuts into the glaze and let set on a wire rack.

Notes

Make sure the oil temperature is right for even frying. You can add different flavors to the glaze for variety.
