- ¾ cup scalded milk
- ⅓ cup granulated sugar
- ¼ teaspoon salt
- 1 (.25 ounce) envelope active dry yeast
- ¼ cup warm water
- 4 cups sifted all-purpose flour
- 1 teaspoon freshly grated nutmeg (Optional)
- ⅓ cup butter or margarine
- 2 eggs

- 2 cups confectioners’ sugar
- 6 tablespoons milk
Instructions
- In a large bowl, combine the scalded milk, sugar, and salt. Allow to cool to lukewarm, then sprinkle the yeast over the warm water and let sit for 5 minutes.
- Once the yeast is bubbly, combine it with the milk mixture. Add the flour, nutmeg (if using), and melted butter, followed by the beaten eggs. Mix until a soft dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm spot until doubled in size, about 1 hour.
- Punch down the dough and roll out to about ½ inch thick. Cut into doughnut shapes and place on a floured baking sheet. Allow to rise again for 30 minutes.
- Heat oil in a deep fryer or large pot to 375°F (190°C). Fry the doughnuts until golden brown, about 1-2 minutes per side. Drain on paper towels.
- For the glaze, whisk together confectioners’ sugar and milk until smooth. Dip the warm doughnuts into the glaze and let set on a wire rack.
Notes
Make sure the oil temperature is right for even frying. You can add different flavors to the glaze for variety.
