- ¼ cup unsalted butter softened
- ½ cup white sugar
- ½ cup brown sugar
- ¾ cup peanut butter
- 1 egg
- 1 egg yolk
- 2 teaspoons vanilla
- 2 cups gluten free quick oats
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup chocolate chips
- ½ cup mini m&ms
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, white sugar, and brown sugar until smooth.
- Add the peanut butter, egg, egg yolk, and vanilla to the mixture and blend until well combined.
- In a separate bowl, mix the gluten free quick oats, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until thoroughly combined.
- Fold in the chocolate chips and mini M&Ms.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, leaving space between each.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
