Description

These Gluten Free Lemon Bars feature a zesty lemon filling atop a buttery, crumbly crust, perfect for spring and summer gatherings.


Ingredients

  • 1 cup (140 g) gum-free gluten free flour blend
  • ½ cup (58 g) confectioners’ sugar
  • ½ teaspoon kosher salt
  • 1 tablespoon finely grated lemon zest
  • 9 tablespoons (126 g) unsalted butter
  • melted and cooled
  • ⅔ cup (93 g) gum-free gluten free flour blend
  • 1 cup (200 g) granulated sugar
  • ¾ teaspoon baking powder
  • ⅔ cup (5.33 fluid ounces) freshly squeezed lemon juice
  • 4 (200 g out of shell) eggs
  • at room temperature

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a mixing bowl, combine the gluten free flour blend, confectioners’ sugar, kosher salt, lemon zest, and melted butter to form the crust.
  3. Press the crust mixture into the bottom of the prepared baking pan and bake for 15 minutes.
  4. In another bowl, whisk together the remaining gluten free flour blend, granulated sugar, baking powder, lemon juice, and eggs until smooth.
  5. Pour the lemon filling over the pre-baked crust and return to the oven, baking for an additional 20-25 minutes, or until the filling is set.
  6. Let the bars cool completely before dusting with confectioners’ sugar and cutting into squares.

Notes

For best results, use a quality gum-free gluten free flour blend and ensure the eggs are at room temperature before using.
