These Gluten Free Lemon Bars feature a zesty lemon filling atop a buttery, crumbly crust, perfect for spring and summer gatherings.

- 1 cup (140 g) gum-free gluten free flour blend
- ½ cup (58 g) confectioners’ sugar
- ½ teaspoon kosher salt
- 1 tablespoon finely grated lemon zest
- 9 tablespoons (126 g) unsalted butter

- ⅔ cup (93 g) gum-free gluten free flour blend
- 1 cup (200 g) granulated sugar
- ¾ teaspoon baking powder
- ⅔ cup (5.33 fluid ounces) freshly squeezed lemon juice
- 4 (200 g out of shell) eggs

Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a mixing bowl, combine the gluten free flour blend, confectioners’ sugar, kosher salt, lemon zest, and melted butter to form the crust.
- Press the crust mixture into the bottom of the prepared baking pan and bake for 15 minutes.
- In another bowl, whisk together the remaining gluten free flour blend, granulated sugar, baking powder, lemon juice, and eggs until smooth.
- Pour the lemon filling over the pre-baked crust and return to the oven, baking for an additional 20-25 minutes, or until the filling is set.
- Let the bars cool completely before dusting with confectioners’ sugar and cutting into squares.
Notes
For best results, use a quality gum-free gluten free flour blend and ensure the eggs are at room temperature before using.
