- 1 package (6 ounces) stuffing mix
- 3/4 cup butter melted
- 3 cups diced zucchini
- 2 cups cubed cooked chicken breast
- 1 can (10-3/4 ounces) condensed cream of chicken soup undiluted
- 1 medium carrot shredded
- 1/2 cup chopped onion
- 1/2 cup sour cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the melted butter and stuffing mix; stir until well blended.
- Spread half of the stuffing mixture in the bottom of a greased 9×13 inch baking dish.
- In another bowl, mix together zucchini, chicken, cream of chicken soup, carrot, onion, and sour cream.
- Spoon the chicken and zucchini mixture over the stuffing layer in the baking dish.
- Top with the remaining stuffing mixture.
- Bake in the preheated oven for about 30 minutes or until bubbly and golden brown.
Notes
Feel free to use leftover rotisserie chicken for a quick meal. This casserole can also be prepared ahead of time and stored in the refrigerator before baking.
