  • 2 cups halved grape or cherry tomatoes
  • 2 cups diced or chopped cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • ½ cup feta
  • 1 cup plain greek yogurt
  • ½ cup grated cucumber
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • ¼ teaspoon salt
  • 1 tablespoon fresh chopped dill

Instructions

  1. In a bowl, combine olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes to create a marinade. Add the chicken breasts, ensuring they are well coated. Marinate for at least 30 minutes.
  2. Preheat the grill or a skillet over medium-high heat. Grill the chicken for about 6-7 minutes per side or until cooked through. Remove and let it rest before slicing.
  3. While the chicken is resting, prepare the tzatziki by mixing Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, and salt in a bowl. Stir in chopped dill.
  4. To assemble the bowls, layer cooked rice or quinoa at the bottom, then add sliced chicken, halved tomatoes, diced cucumber, shredded lettuce, sliced red onion, and feta cheese.
