- 2 cups halved grape or cherry tomatoes

- 4 cups shredded romaine lettuce
- 1 cup sliced red onion
- ½ cup feta
- 1 cup plain greek yogurt
- ½ cup grated cucumber
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
- ¼ teaspoon salt
- 1 tablespoon fresh chopped dill
Instructions
- In a bowl, combine olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes to create a marinade. Add the chicken breasts, ensuring they are well coated. Marinate for at least 30 minutes.
- Preheat the grill or a skillet over medium-high heat. Grill the chicken for about 6-7 minutes per side or until cooked through. Remove and let it rest before slicing.
- While the chicken is resting, prepare the tzatziki by mixing Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, and salt in a bowl. Stir in chopped dill.
- To assemble the bowls, layer cooked rice or quinoa at the bottom, then add sliced chicken, halved tomatoes, diced cucumber, shredded lettuce, sliced red onion, and feta cheese.
- Drizzle with tzatziki sauce before serving and enjoy!
