Description

These Greek Honey Pistachio Cheesecake Bars feature a creamy cheesecake filling made with Greek yogurt and honey, all sitting on a buttery graham cracker crust, topped with a drizzle of honey and crunchy pistachios.

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter
  • melted
  • ¼ cup granulated sugar
  • 16 oz cream cheese
  • softened
  • ½ cup Greek yogurt
  • ½ cup honey
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup finely chopped pistachios
  • ¼ cup honey for drizzling
  • ¼ cup chopped pistachios for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of the prepared pan.
  3. In another bowl, beat the cream cheese until smooth. Add in the Greek yogurt, honey, eggs, and vanilla extract, blending until well combined.
  4. Fold in the finely chopped pistachios, then pour the filling over the crust in the baking pan.
  5. Bake in preheated oven for 30 minutes, or until set. Let cool at room temperature, then refrigerate for at least 2 hours before slicing.
  6. Once chilled, drizzle with honey and sprinkle with chopped pistachios before serving.

Notes

For a richer flavor, let the cheesecake bars sit in the refrigerator overnight. You can also substitute the pistachios with your preferred nuts.
