These Greek Honey Pistachio Cheesecake Bars feature a creamy cheesecake filling made with Greek yogurt and honey, all sitting on a buttery graham cracker crust, topped with a drizzle of honey and crunchy pistachios.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter
- melted
- ¼ cup granulated sugar
- 16 oz cream cheese
- softened
- ½ cup Greek yogurt
- ½ cup honey
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup finely chopped pistachios
- ¼ cup honey for drizzling
- ¼ cup chopped pistachios for garnish
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of the prepared pan.
- In another bowl, beat the cream cheese until smooth. Add in the Greek yogurt, honey, eggs, and vanilla extract, blending until well combined.
- Fold in the finely chopped pistachios, then pour the filling over the crust in the baking pan.
- Bake in preheated oven for 30 minutes, or until set. Let cool at room temperature, then refrigerate for at least 2 hours before slicing.
- Once chilled, drizzle with honey and sprinkle with chopped pistachios before serving.
Notes
For a richer flavor, let the cheesecake bars sit in the refrigerator overnight. You can also substitute the pistachios with your preferred nuts.
