Description
A hearty and flavorful Green Chile Chicken Stew, perfect for a comforting meal with a hint of spice from roasted Hatch chiles.

- 2 tbsp olive oil
- 1 small yellow onion – diced
- 1 cup corn – (from about 2 ears)
- 4 cloves garlic – minced
- 1 tbsp ground coriander
- 1 1/2 tsp ground cumin
- 1/4 tsp paprika
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 3 Hatch chiles – (fire roasted)
- seeds removed and diced
- 1 (16 oz) jar salsa verde
- 4 cup low-sodium chicken broth
- 1 cup water
- 1 lime – juiced
- 1 small rotisserie chicken – pulled
- 1 tbsp fresh cilantro – chopped
- 1/2 cup long grain white rice

Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and corn, and sauté until softened, about 5 minutes.
- Stir in the minced garlic, ground coriander, ground cumin, paprika, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.
- Add the diced roasted Hatch chiles and salsa verde, stirring well to combine.
- Pour in the chicken broth and water, bringing the mixture to a boil.
- Stir in the lime juice, pulled rotisserie chicken, and long grain white rice. Reduce heat and simmer for about 20 minutes, or until the rice is cooked.
- Remove from heat and stir in chopped cilantro before serving.
Notes
If fresh Hatch chiles are unavailable, canned fire-roasted chiles can be used as a substitute. Adjust seasoning based on your taste preferences.
