Description

A hearty and flavorful Green Chile Chicken Stew, perfect for a comforting meal with a hint of spice from roasted Hatch chiles.


Ingredients

  • 2 tbsp olive oil
  • 1 small yellow onion – diced
  • 1 cup corn – (from about 2 ears)
  • 4 cloves garlic – minced
  • 1 tbsp ground coriander
  • 1 1/2 tsp ground cumin
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 3 Hatch chiles – (fire roasted)
  • seeds removed and diced
  • 1 (16 oz) jar salsa verde
  • 4 cup low-sodium chicken broth
  • 1 cup water
  • 1 lime – juiced
  • 1 small rotisserie chicken – pulled
  • 1 tbsp fresh cilantro – chopped
  • 1/2 cup long grain white rice
  • Optional Garnish: lime wedges

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and corn, and sauté until softened, about 5 minutes.
  2. Stir in the minced garlic, ground coriander, ground cumin, paprika, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.
  3. Add the diced roasted Hatch chiles and salsa verde, stirring well to combine.
  4. Pour in the chicken broth and water, bringing the mixture to a boil.
  5. Stir in the lime juice, pulled rotisserie chicken, and long grain white rice. Reduce heat and simmer for about 20 minutes, or until the rice is cooked.
  6. Remove from heat and stir in chopped cilantro before serving.

Notes

If fresh Hatch chiles are unavailable, canned fire-roasted chiles can be used as a substitute. Adjust seasoning based on your taste preferences.
