Description

This Green Chile Chicken Stew is a flavorful and hearty dish that combines tender chicken with the smoky sweetness of Hatch chiles, vibrant salsa verde, and wholesome corn. Perfect for a cozy meal any day of the week.


Ingredients

  • 2 tbsp olive oil
  • 1 small yellow onion – diced
  • 1 cup corn – (from about 2 ears)
  • 4 cloves garlic – minced
  • 1 tbsp ground coriander
  • 1 1/2 tsp ground cumin
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 3 Hatch chiles – (fire roasted)
  • seeds removed and diced
  • 1 (16 oz) jar salsa verde
  • 4 cup low-sodium chicken broth
  • 1 cup water
  • 1 lime – juiced
  • 1 small rotisserie chicken – pulled
  • 1 tbsp fresh cilantro – chopped
  • 1/2 cup long grain white rice
  • Optional Garnish: lime wedges

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  2. Stir in corn, minced garlic, ground coriander, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes, stirring occasionally.
  3. Add the diced Hatch chiles, salsa verde, chicken broth, and water. Bring to a simmer.
  4. Stir in lime juice, pulled rotisserie chicken, and rice. Cook covered for 20-25 minutes, or until the rice is tender.
  5. Taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.

Notes

If you can’t find fresh Hatch chiles, canned ones can be a great substitute. This stew works well with or without rice based on your preference.
