This Green Chile Chicken Stew is a flavorful and hearty dish that combines tender chicken with the smoky sweetness of Hatch chiles, vibrant salsa verde, and wholesome corn. Perfect for a cozy meal any day of the week.

- 2 tbsp olive oil
- 1 small yellow onion – diced
- 1 cup corn – (from about 2 ears)
- 4 cloves garlic – minced
- 1 tbsp ground coriander
- 1 1/2 tsp ground cumin
- 1/4 tsp paprika
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 3 Hatch chiles – (fire roasted)
- seeds removed and diced
- 1 (16 oz) jar salsa verde
- 4 cup low-sodium chicken broth
- 1 cup water
- 1 lime – juiced
- 1 small rotisserie chicken – pulled
- 1 tbsp fresh cilantro – chopped
- 1/2 cup long grain white rice
- Optional Garnish: lime wedges

Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes.
- Stir in corn, minced garlic, ground coriander, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes, stirring occasionally.
- Add the diced Hatch chiles, salsa verde, chicken broth, and water. Bring to a simmer.
- Stir in lime juice, pulled rotisserie chicken, and rice. Cook covered for 20-25 minutes, or until the rice is tender.
- Taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.
Notes
If you can’t find fresh Hatch chiles, canned ones can be a great substitute. This stew works well with or without rice based on your preference.
