Ingredients

  • sliced bread
  • arugula
  • mozzarella cheese
  • english cucumber
  • avocado
  • alfalfa sprouts
  • greek yogurt
  • mayonnaise
  • garlic
  • chives
  • tarragon
  • lemon zest
  • lemon juice
  • olive oil
  • salt
  • pepper

Instructions

  1. In a bowl, combine greek yogurt, mayonnaise, minced garlic, chopped chives, tarragon, lemon zest, lemon juice, olive oil, salt, and pepper to create the Green Goddess sauce.
  2. Spread a generous amount of the Green Goddess sauce onto one side of each slice of hearty bread.
  3. Layer fresh arugula, slices of mozzarella cheese, thinly sliced cucumber, mashed or sliced avocado, and alfalfa sprouts on one slice of bread.
  4. Top with the other slice of bread, sauce side down, and gently press together.
  5. Slice the sandwich in half and serve immediately, with additional sauce on the side if desired.
