- 1 large egg
- 1 cup milk
- 3 tbsp unsalted butter
- 2 chopped green onions
- 1 1/2 cups grated sharp cheddar cheese
- 1 1/2 cups shredded zucchini
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, combine the dry ingredients: baking powder, baking soda, all-purpose flour, and salt.
- In another bowl, whisk together the wet ingredients: vinegar, egg, milk, and melted butter.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the green onions, cheddar cheese, and shredded zucchini until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for about 30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For best results, use freshly grated zucchini and ensure it’s well-drained to avoid excess moisture in the bread.
