Description

This Easy Grilled Shrimp Bowl with Avocado and Corn is a vibrant and delicious meal perfect for summer. Bursting with flavors, this bowl features succulent grilled shrimp paired with creamy avocado and sweet corn, all topped with a spicy mayo.

Ingredients

Scale
  • 2 lb shrimp (peeled and deveined with tails left on)
  • 2 tbsp vegetable oil
  • 1 1/4 tsp salt
  • 1 tsp smoked paprika
  • 1 cup barbecue sauce (I use Sweet Baby Ray’s for the best glaze)
  • 4 skewers
  • 1/2 cup mayonnaise (I prefer Hellmann’s for a creamier base)
  • 2 tbsp sriracha
  • 2 tbsp lime juice
  • 1/4 tsp salt
  • 2 avocados (diced into 1/2-inch cubes)
  • 3 ears corn
  • 1/4 cup cilantro
  • 1/4 cup red onion (finely diced)
  • 2 tbsp lime juice
  • 2 1/2 tbsp olive oil (I like Goya Extra Virgin for this salad)
  • salt to taste
  • 1/2 tsp black pepper
  • 1/2 cup queso fresco
  • 4 cups couscous (fluffed with a fork to prevent clumping)
  • 2 cups cherry tomatoes (halved or quartered into bite-sized pieces)
  • 1/4 cup fresh cilantro
  • 1 lime (cut into 6 wedges for serving)

Instructions

  1. In a bowl, mix shrimp with vegetable oil, salt, smoked paprika, and barbecue sauce. Marinate for 15-20 minutes.
  2. Meanwhile, prepare the spicy mayo by combining mayonnaise, sriracha, lime juice, and salt in a small bowl. Set aside.
  3. Grill the marinated shrimp on skewers over medium heat for about 2-3 minutes on each side or until they’re pink and cooked through.
  4. For the avocado salad, grill the corn until slightly charred, then cut the kernels off the cob and mix with diced avocados, cilantro, red onion, lime juice, olive oil, salt, and pepper.
  5. To assemble the bowls, layer couscous, cherry tomatoes, grilled shrimp, and avocado salad. Drizzle with spicy mayo and garnish with cilantro. Serve with lime wedges.

Notes

Feel free to customize the bowl with your favorite toppings like additional veggies or different cheeses. You can also substitute quinoa or rice for couscous if desired.
