- 1 lb lean ground beef 80/20 or 90/10 blend
- 2 tbsp tomato paste
- 1/4 cup beef broth
- 1 tbsp taco seasoning
- 4 large flour tortillas
- 1.5 cups bright orange cheddar cheese
- 1.5 cups white Monterey Jack cheese
- 1 tbsp vegetable oil
- 2 tbsp fresh green cilantro
- 1/2 cup smooth white sour cream
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes.
- Stir in the tomato paste, beef broth, and taco seasoning, mix well and allow it to simmer for 5 minutes.
- In a separate pan, heat 1/2 tablespoon of vegetable oil over medium heat.
- Place one tortilla in the pan and layer half of the beef mixture and half of both cheeses on one half of the tortilla.
- Fold the tortilla in half and cook until golden-brown, about 3-4 minutes on each side.
- Repeat with remaining ingredients, adding more oil as needed.
- Slice each quesadilla and garnish with fresh cilantro. Serve with sour cream for dipping.
Notes
For extra flavor, consider adding diced onions or peppers to the beef mixture. Adjust seasoning according to personal taste.
