Description

This Ground Turkey Meatloaf is a flavorful and healthy twist on a classic dish, combining ground turkey with riced broccoli and cheddar cheese for an added nutritional boost.


Ingredients

1/3 cup panko bread crumbs

1/3 cup milk

1/4 cup grated white onion

10 oz. frozen riced broccoli

1/3 cup ketchup

1/4 cup yellow mustard

1 egg

2 tsp. seasoning salt

1/2 tsp. black pepper

2 lbs. ground turkey

1 1/2 cups shredded cheddar cheese

extra ketchup for serving (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine panko bread crumbs, milk, grated onion, riced broccoli, ketchup, mustard, egg, seasoning salt, and black pepper. Mix well.
  3. Add the ground turkey and shredded cheddar cheese to the mixture. Mix until just combined.
  4. Transfer the meat mixture into a greased loaf pan and shape it into a loaf.
  5. Bake in the preheated oven for 30-35 minutes, or until the meatloaf reaches an internal temperature of 165°F (75°C).
  6. Let the meatloaf rest for a few minutes before slicing. Serve with extra ketchup if desired.

Notes

For a moist meatloaf, avoid overmixing the turkey with the other ingredients. You can also add your favorite herbs for extra flavor.
