Description

This Guilt-Free Zucchini Bake is a delicious, healthy dish perfect for summer, combining fresh zucchini with a hint of garlic and Italian herbs.


Ingredients

  • 500 g zucchini
  • grated
  • 3 egg whites
  • 100 g low-fat mozzarella cheese
  • shredded
  • 50 g whole wheat breadcrumbs
  • 1 clove garlic
  • minced
  • 1 small onion
  • finely chopped
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a baking dish with olive oil.
  2. In a large bowl, combine the grated zucchini, egg whites, minced garlic, chopped onion, mozzarella cheese, whole wheat breadcrumbs, Italian seasoning, salt, and pepper.
  3. Mix all ingredients until well combined and pour the mixture into the prepared baking dish.
  4. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the edges are set.
