Ingredients

  • 6 hard-boiled eggs
  • food coloring (black
  • purple
  • green
  • or other)
  • water (to cover eggs)
  • splash of white vinegar
  • 3 tbsp mayonnaise
  • 1 tsp mustard (Dijon or yellow)
  • 1 tsp apple cider vinegar
  • pinch of salt
  • pinch of pepper
  • Sprinkle of paprika
  • chia seeds
  • or parsley (optional)

Instructions

  1. In a pot, place the hard-boiled eggs and cover them with water. Add a splash of white vinegar.
  2. Bring the water to a boil, then remove from heat and let it cool for about 10 minutes.
  3. Peel the eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl.
  4. Add mayonnaise, mustard, apple cider vinegar, salt, and pepper to the yolks. Mix until smooth.
  5. To create your spooky colors, prepare the food coloring in separate bowls with a little water. Dip the egg whites in the colored water for a few minutes.
  6. Once colored, fill each egg white with the yolk mixture.
  7. Sprinkle with paprika, chia seeds, or parsley if desired for extra spookiness.

Notes

Feel free to experiment with different colors for a more vibrant display. These eggs can be made a day in advance; just cover them tightly and refrigerate.
