Ingredients
8 ounces (227 g) cellentani or macaroni noodles
2 tablespoons (28 g) butter
2 tablespoons (15 g) flour
1 cup (237 ml) milk
4 ounces (113 g) white cheddar, grated
4 ounces (113 g) fontina, grated
Salt, to taste
5–7 drops green food coloring
Instructions
Boil 8 ounces of cellentani or macaroni noodles in salted water until al dente. Drain and set aside.
In a saucepan, melt 2 tablespoons of butter over medium heat.
Whisk in 2 tablespoons of flour and cook for about a minute to create a roux.
Gradually add 1 cup of milk, whisking constantly until smooth. Cook until the mixture thickens (about 3-5 minutes).
Stir in 4 ounces each of grated white cheddar and fontina cheese, seasoning with salt to taste.
Add 5-7 drops of green food coloring and stir until the sauce takes on a spooky hue.
Mix the cooked noodles into the cheese sauce, making sure they are well coated.
Transfer the mixture to a greased baking dish and bake in a preheated oven until bubbly and golden.
Serve in fun, themed bowls or platters for a spooky touch!
Notes
For added flavor, you can use a blend of cheeses like mozzarella or gouda.
If you prefer a little spice, consider adding a pinch of crushed red pepper or spicy seasonings.
Get creative with toppings! Try using olives as eyes or crispy fried onions for extra crunch.
To add an autumn twist, try adding some pumpkin puree to the sauce for a creamy, seasonal flavor.
