Description

This Hamburger and Zucchini Skillet is a hearty and delicious one-pan meal loaded with ground beef, fresh zucchini, and cheesy goodness that your whole family will love.


Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion chopped
  • 1 small green pepper seeded and chopped
  • 3 cloves garlic minced
  • 2 tsp chili powder
  • 3/4 tsp salt
  • 1/3 tsp pepper
  • 3 medium zucchini cubed
  • 2 large tomatoes seeded and diced
  • 1/4 c. water
  • 1 c. uncooked instant brown rice
  • 1 c. shredded colby jack cheese

Instructions

  1. In a large skillet, brown the ground beef over medium heat until fully cooked.
  2. Add chopped onion, green pepper, and minced garlic to the skillet and sauté until vegetables are tender.
  3. Stir in chili powder, salt, and pepper, then add the cubed zucchini and diced tomatoes.
  4. Pour in water and bring to a boil before adding the instant brown rice.
  5. Cover and reduce heat to low, allowing to simmer until rice is cooked and zucchini is tender, about 20 minutes.
  6. Sprinkle shredded colby jack cheese over the mixture, cover, and let sit for a few minutes until cheese is melted.
