- 1 lb ground beef
- 1 medium yellow onion chopped
- 1 small green pepper seeded and chopped
- 3 cloves garlic minced
- 2 tsp chili powder
- 3/4 tsp salt
- 1/3 tsp pepper
- 3 medium zucchini cubed
- 2 large tomatoes seeded and diced
- 1/4 c. water
- 1 c. uncooked instant brown rice
- 1 c. shredded colby jack cheese
Instructions
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add chopped onion, green pepper, and minced garlic to the skillet and sauté until vegetables are tender.
- Stir in chili powder, salt, and pepper, then add the cubed zucchini and diced tomatoes.
- Pour in water and bring to a boil before adding the instant brown rice.
- Cover and reduce heat to low, allowing to simmer until rice is cooked and zucchini is tender, about 20 minutes.
- Sprinkle shredded colby jack cheese over the mixture, cover, and let sit for a few minutes until cheese is melted.
