- 1 lb ground beef
- 1 medium yellow onion chopped
- 1 small green pepper seeded and chopped
- 3 cloves garlic minced
- 2 tsp chili powder
- 3/4 tsp salt
- 1/3 tsp pepper
- 3 medium zucchini cubed
- 2 large tomatoes seeded and diced
- 1/4 c. water
- 1 c. uncooked instant brown rice
- 1 c. shredded colby jack cheese
Instructions
- In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the chopped onion, green pepper, and minced garlic to the skillet. Sauté for about 5 minutes or until the vegetables are tender.
- Stir in the chili powder, salt, and pepper. Mix to combine.
- Add the cubed zucchini and diced tomatoes to the skillet.
- Pour in the water and stir in the instant brown rice. Bring the mixture to a boil.
- Reduce heat, cover, and simmer for 15-20 minutes, or until the rice is cooked and zucchini is tender.
- Remove from heat, sprinkle with shredded colby jack cheese, cover, and let sit for an additional 5 minutes until cheese is melted.
Notes
You can customize this dish by adding your favorite vegetables or spices. For a lighter version, substitute ground turkey for beef.
