  • 1/2 cup (120 ml) buttermilk

  • 1 3/4 cups (219 g) all purpose flour
  • spooned and leveled then sifted
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups (336 g) unsalted butter
  • softened
  • 1 cup (170 g) butterscotch chips
  • melted and slightly cooled
  • 2 1/4 cups (290 g) powdered sugar
  • measured then sifted
  • 3/4 tsp butter extract
  • 1/2 tsp vanilla
  • 1/4 cup (42 g) butterscotch chips
  • 1 tbsp heavy cream
  • 1/2 tbsp honey

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a mixing bowl, cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy.
  3. Add in the eggs, vanilla bean paste, and butter extract, mixing until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Slowly add the dry ingredients to the wet ingredients, alternating with the butterscotch beer and buttermilk, mixing until just combined.
  6. Stir in the melted butterscotch chips.
  7. Distribute the batter evenly into the cupcake liners, filling them about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let cool.
  9. For the butterscotch buttercream, beat the softened butter until creamy, then add the melted butterscotch chips, powdered sugar, butter extract, and vanilla, mixing until smooth.
  10. Frost the cooled cupcakes with the butterscotch buttercream.
  11. For the butterscotch ganache, combine butterscotch chips, heavy cream, and honey in a microwave-safe bowl and heat until melted. Stir until smooth and drizzle over the frosted cupcakes.
