- 1.5 pounds tomatillos
- fresh
- husks and stems removed
- 4 hatch chiles

- ½ cup white onion
- chopped
- ½ cup cilantro leaves

- 2 garlic cloves
- 2 limes

- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Arrange the tomatillos and hatch chiles on a baking sheet and roast for about 20 minutes or until they are softened and slightly charred.
- Once roasted, let them cool slightly, then peel the skin off the chiles.
- In a blender or food processor, combine the roasted tomatillos, chiles, white onion, cilantro, garlic, lime juice, salt, and black pepper.
- Blend until smooth and adjust seasoning to taste.
- Serve immediately or store in an airtight container in the refrigerator for up to a week.
