  • Hatch chiles (3-4 medium
  • roasted and diced / about ½ cup)
  • Long-grain white rice (1 cup / 190g)
  • Chicken broth (2 ½ cups / 600ml)
  • Onion (1 medium
  • diced / about 150g)
  • Garlic (3 cloves
  • minced / about 1 tablespoon)
  • Olive oil (2 tablespoons / 30ml)
  • Ground cumin (1 teaspoon)
  • Smoked paprika (1 teaspoon)
  • Salt and black pepper
  • Fresh cilantro (¼ cup
  • chopped / about 4g)
  • Lime wedges (for serving)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Season the chicken thighs with salt, pepper, cumin, and smoked paprika. Add the chicken to the skillet and cook for about 5-7 minutes, turning to brown on all sides.
  4. Stir in the roasted Hatch chiles and rice, ensuring the rice is well combined with the other ingredients.
  5. Pour in the chicken broth, bring to a boil, then cover and reduce heat to simmer for about 20 minutes, or until the rice is cooked and chicken is tender.
  6. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, garnish with fresh cilantro, and serve with lime wedges.
