Ingredients
- Chicken thighs (1.5 pounds / 680g

- Hatch chiles (3-4 medium

- Long-grain white rice (1 cup / 190g)
- Chicken broth (2 ½ cups / 600ml)
- Onion (1 medium
- diced / about 150g)
- Garlic (3 cloves
- minced / about 1 tablespoon)
- Olive oil (2 tablespoons / 30ml)
- Ground cumin (1 teaspoon)
- Smoked paprika (1 teaspoon)
- Salt and black pepper
- Fresh cilantro (¼ cup
- chopped / about 4g)
- Lime wedges (for serving)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Add minced garlic and cook for an additional minute until fragrant.
- Season the chicken thighs with salt, pepper, cumin, and smoked paprika. Add the chicken to the skillet and cook for about 5-7 minutes, turning to brown on all sides.
- Stir in the roasted Hatch chiles and rice, ensuring the rice is well combined with the other ingredients.
- Pour in the chicken broth, bring to a boil, then cover and reduce heat to simmer for about 20 minutes, or until the rice is cooked and chicken is tender.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, garnish with fresh cilantro, and serve with lime wedges.
Notes
Feel free to adjust the number of Hatch chiles based on your heat preference. This recipe is versatile; you can also add other vegetables like bell peppers or zucchini for extra nutrition.
