  • 1 Tbsp cilantro

  • 34 green onions

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped sweet onion and sauté until translucent.
  2. Stir in the roasted Hatch green chiles, red bell pepper, and minced garlic, cooking for an additional 2-3 minutes.
  3. Sprinkle the flour and cumin over the vegetable mixture, stirring constantly for about 1 minute to create a roux.
  4. Gradually add the warm chicken stock, whisking to combine until smooth.
  5. Simmer the soup for 15-20 minutes, allowing it to thicken slightly.
  6. Stir in the shredded cheese and chopped cilantro until melted and combined.
  7. Serve hot, garnished with fried tortilla strips, a dollop of sour cream, chopped cilantro, and green onions.
