Instructions
- In a large pot, melt the butter over medium heat. Add the chopped sweet onion and sauté until translucent.
- Stir in the roasted Hatch green chiles, red bell pepper, and minced garlic, cooking for an additional 2-3 minutes.
- Sprinkle the flour and cumin over the vegetable mixture, stirring constantly for about 1 minute to create a roux.
- Gradually add the warm chicken stock, whisking to combine until smooth.
- Simmer the soup for 15-20 minutes, allowing it to thicken slightly.
- Stir in the shredded cheese and chopped cilantro until melted and combined.
- Serve hot, garnished with fried tortilla strips, a dollop of sour cream, chopped cilantro, and green onions.
Notes
For an extra kick, consider adding more chopped chiles or a splash of hot sauce. Adjust the consistency of the soup by adding more stock if desired.
