- 160 g rolled oats
- 90 g oat bran
- 75 g xylitol (or sweetener of choice)
- 2 tsp baking powder
- 3 tsp cinnamon
- 150 ml milk (of choice)
- 200 g Greek yoghurt
- 2 large eggs
- 1 tsp vanilla extract
- 350 g apple

- 60 g chopped nuts
- 1 tsp cinnamon
- 1 tsp xylitol
Instructions
- Preheat your oven to 180°C (350°F) and grease a baking dish.
- In a large bowl, combine the rolled oats, oat bran, xylitol, baking powder, and cinnamon.
- In another bowl, whisk together the milk, Greek yogurt, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the grated apple until evenly distributed.
- Pour the mixture into the prepared baking dish and smooth the top.
- In a small bowl, mix the chopped nuts, cinnamon, and xylitol for the topping, then sprinkle it over the batter.
- Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before slicing into squares and serving.
Notes
Feel free to substitute the xylitol with your favorite sweetener and add other fruits or nuts for variation.
