- skinless chicken breasts
- ½ cup whole wheat flour
- 3 large eggs
- 1.5 cup shredded mozzarella
- 1.5 cups marinara sauce
- 1 cup whole wheat bread crumbs
- ½ cup grated Parmesan cheese
- ¼ teaspoon black pepper
- 2 teaspoons dried basil
- 2 teaspoons dried parsley
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Set up a breading station with three shallow bowls: one with whole wheat flour, one with beaten eggs, and the last with the breading mixture (whole wheat bread crumbs, grated Parmesan, black pepper, basil, and parsley).
- Dredge each chicken breast in the flour, then dip into the egg, and finally coat evenly with the breadcrumb mixture.
- Place the breaded chicken on the prepared baking sheet and bake for 20 minutes, flipping halfway through.
- Remove the chicken from the oven, top each piece with marinara sauce and shredded mozzarella cheese.
- Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
