- Cooking spray or 2 teaspoons olive oil
- ½ white onion – diced
- 5 oz fresh spinach
- 6 large eggs
- 4 egg whites
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ¼ cup milk
- ¼ cup shredded cheddar cheese
- 1 cup sliced cherry tomatoes
- 6 English muffins – sourdough or whole wheat
- 6 cheddar cheese slices
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat cooking spray or olive oil over medium heat. Sauté the diced onion until translucent.
- Add the fresh spinach to the skillet and cook until wilted. Remove from heat.
- In a mixing bowl, whisk together the eggs, egg whites, kosher salt, black pepper, and milk.
- Stir in the sautéed onion, spinach, shredded cheddar cheese, and cherry tomatoes.
- Pour the egg mixture into a greased baking dish and bake for 20-25 minutes or until set.
- Once cooled, slice the baked egg mixture into sections suitable for the English muffins.
- Assemble the sandwiches by placing a slice of the egg mixture and a cheddar cheese slice between each English muffin half.
- Serve immediately or store in the refrigerator for quick breakfasts throughout the week.
Notes
These sandwiches can be stored in the fridge for up to 5 days. Reheat in the microwave for a quick breakfast on the go.
