Ingredients

  • Cooking spray or 2 teaspoons olive oil
  • ½ white onion – diced
  • 5 oz fresh spinach
  • 6 large eggs
  • 4 egg whites
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ¼ cup milk
  • ¼ cup shredded cheddar cheese
  • 1 cup sliced cherry tomatoes
  • 6 English muffins – sourdough or whole wheat
  • 6 cheddar cheese slices

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat cooking spray or olive oil over medium heat. Sauté the diced onion until translucent.
  3. Add the fresh spinach to the skillet and cook until wilted. Remove from heat.
  4. In a mixing bowl, whisk together the eggs, egg whites, kosher salt, black pepper, and milk.
  5. Stir in the sautéed onion, spinach, shredded cheddar cheese, and cherry tomatoes.
  6. Pour the egg mixture into a greased baking dish and bake for 20-25 minutes or until set.
  7. Once cooled, slice the baked egg mixture into sections suitable for the English muffins.
  8. Assemble the sandwiches by placing a slice of the egg mixture and a cheddar cheese slice between each English muffin half.
  9. Serve immediately or store in the refrigerator for quick breakfasts throughout the week.

Notes

These sandwiches can be stored in the fridge for up to 5 days. Reheat in the microwave for a quick breakfast on the go.
