  • Butter flavored cooking spray
  • 1 1/2 cups finely crushed buttery crackers
  • 1/4 cup melted unsalted butter
  • 2 cups chopped cooked chicken
  • 1 1/2 pounds zucchini
  • 1/2 cup diced onion
  • 2 tsp minced garlic
  • 3 tbsp flour
  • 1 1/2 cups milk
  • 5 oz jar Cheddar cheese spread

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray a casserole dish with butter flavored cooking spray.
  2. In a mixing bowl, combine the finely crushed buttery crackers and melted butter until well combined, then set aside.
  3. In a large skillet over medium heat, sauté the diced onion and minced garlic until the onion is translucent.
  4. Add the sliced zucchini to the skillet and stir-fry for about 5 minutes until slightly softened.
  5. Sprinkle the flour over the zucchini mixture and stir before slowly adding the milk to create a creamy sauce; cook for another 2-3 minutes until thickened.
  6. Mix in the chopped chicken and the Cheddar cheese spread until well combined.
  7. Transfer the mixture into the prepared casserole dish and top with the buttery cracker crumbs.
  8. Bake in the preheated oven for 30 minutes or until the top is golden and bubbly.
  9. Allow to cool for a few minutes before serving and enjoy your Healthy Chicken Zucchini Casserole!

Notes

Feel free to substitute the cheddar cheese spread with your favorite cheese for a different flavor. Leftover vegetables can also be added.
