This Healthy Mediterranean Fish Soup is a delicious and nourishing dish that features firm white fish and a medley of fresh vegetables simmered in a flavorful broth.
Ingredients
1 lb firm white fish (cod
halibut
or sea bass)
cut into bite-sized chunks
2 tablespoons extra-virgin olive oil
1 large onion
finely diced
3 cloves garlic
minced
2 medium carrots
sliced into thin rounds
1 fennel bulb
thinly sliced
1 can (14 oz) fire-roasted diced tomatoes
4 cups high-quality vegetable broth
1/2 teaspoon smoked paprika (for a deep
earthy warmth)
1 teaspoon dried oregano
Fresh parsley and lemon wedges for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened and fragrant, about 5 minutes.
- Add the sliced carrots and fennel to the pot, cooking for an additional 5 minutes until they begin to soften.
- Stir in the fire-roasted diced tomatoes, smoked paprika, and dried oregano, mixing well.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes.
- Add the fish chunks to the pot and cook for another 5-10 minutes, or until the fish is cooked through and flakes easily.
- Serve hot, garnished with fresh parsley and lemon wedges.
Notes
Feel free to add other Mediterranean vegetables such as zucchini or bell peppers for more flavor and nutrition. This soup also freezes well!
