Ingredients

- 1 1/2 limes
- juiced (plus zest from 1 lime for brightness)
- 1 cup cherries
- halved and pitted
- Salt

- 1 large handful cilantro
- fresh and finely chopped
- 2 garlic cloves
- minced
- 2 peaches
- diced into 1/2-inch pieces
- 1 jalapeño pepper
- chopped (seeds removed for less heat)
- 1/2 small red onion
- finely diced
Instructions
- In a large mixing bowl, combine the lime juice, lime zest, and salt. Stir to mix.
- Add the halved cherries, diced peaches, minced garlic, chopped jalapeño, diced red onion, and chopped cilantro to the bowl.
- Gently toss all the ingredients together until well combined.
- Taste and adjust the salt as needed.
- Let the salsa sit for at least 15 minutes to allow the flavors to meld before serving.
