Description

This Healthy Peach Cherry Salsa is a vibrant and refreshing combination of juicy peaches and tart cherries, perfect for summer gatherings or as a zesty topping for grilled meats.


Ingredients

  • 1 1/2 limes
  • juiced (plus zest from 1 lime for brightness)
  • 1 cup cherries
  • halved and pitted
  • Salt
  • to taste (sea salt is lovely here)
  • 1 large handful cilantro
  • fresh and finely chopped
  • 2 garlic cloves
  • minced
  • 2 peaches
  • diced into 1/2-inch pieces
  • 1 jalapeño pepper
  • chopped (seeds removed for less heat)
  • 1/2 small red onion
  • finely diced

Instructions

  1. In a large mixing bowl, combine the lime juice, lime zest, and salt. Stir to mix.
  2. Add the halved cherries, diced peaches, minced garlic, chopped jalapeño, diced red onion, and chopped cilantro to the bowl.
  3. Gently toss all the ingredients together until well combined.
  4. Taste and adjust the salt as needed.
  5. Let the salsa sit for at least 15 minutes to allow the flavors to meld before serving.
