Description

These Healthy Pear Oatmeal Crumb Bars feature a deliciously buttery shortbread crust topped with a sweet and spiced pear filling, making them a perfect guilt-free dessert or snack.


Ingredients

  • ½ cup coconut oil or butter

  • 1 1/3 cups gluten-free all-purpose flour
  • 1 cup gluten-free rolled oats
  • ¼ cup pure maple syrup
  • Pinch sea salt
  • 3 large ripe bosc pears
  • sliced
  • ¼ cup water
  • 2 Tbsp pure maple syrup
  • ½ tsp ground cinnamon
  • Pinch ground nutmeg
  • optional
  • 1 Tbsp gluten-free all-purpose flour
  • Pinch sea salt
  • 1 cup powdered sugar
  • 2 Tbsp water or lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a mixing bowl, combine melted coconut oil or butter, gluten-free flour, rolled oats, maple syrup, and a pinch of sea salt to form the crust and topping mixture.
  3. Press half of the mixture into the bottom of the prepared baking dish to form the crust.
  4. In a saucepan over medium heat, combine sliced pears, water, 2 tbsp maple syrup, cinnamon, nutmeg (if using), gluten-free flour, and a pinch of sea salt. Cook until pears are tender, about 5-7 minutes.
  5. Spread the pear filling over the crust in the baking dish.
  6. Sprinkle the remaining crust mixture on top of the pears.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
  8. Remove from oven and let cool before cutting into bars.
  9. If using, mix powdered sugar with water or lemon juice to create a glaze and drizzle over the bars before serving.

Notes

Feel free to adjust the sweetness of the filling by adding more or less maple syrup based on your preference. These bars can be stored in an airtight container for up to a week.
