  • Skinless Chicken Breasts or Thighs (about 1.5 lbs / 700g)
  • Canned Crushed Tomatoes (28 oz / 800g)
  • Chicken Broth (4 cups / 950 ml)
  • Small Pasta Shapes (¾ cup / 75g)
  • Parmesan Cheese (½ cup / 50g
  • freshly grated)
  • Garlic Cloves (3-4
  • minced)
  • Onion (1 medium
  • finely chopped)
  • Italian Seasoning (1 tbsp)
  • Red Pepper Flakes (optional
  • ¼ tsp)
  • Salt and Freshly Ground Black Pepper
  • Olive Oil (2 tbsp)
  • Fresh Basil Leaves (a handful
  • chopped)
  • Fresh Mozzarella (optional
  • torn into small pieces)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  2. Transfer the sautéed onion and garlic to the crockpot. Add the boneless chicken, crushed tomatoes, chicken broth, and Italian seasoning. Season with salt, pepper, and red pepper flakes if using.
  3. Cover and cook on low for 4-6 hours or high for 2-3 hours until the chicken is tender and easily shredded.
  4. Once cooked, remove the chicken, shred it using two forks, and return to the crockpot. Stir in the small pasta and let it cook on high for an additional 15-20 minutes until the pasta is tender.
  5. Finally, stir in the freshly grated Parmesan cheese and fresh basil leaves. If desired, add in pieces of fresh mozzarella just before serving for an extra cheesy finish.

Notes

For a thicker soup, feel free to add more pasta or reduce the amount of broth. Serve with crusty bread for a complete meal.
