Ingredients

  • 1 lb ground beef
  • 1 cup long-grain white rice
  • 1 can (14.5 oz) diced tomatoes
  • undrained
  • 1 small onion
  • finely chopped
  • 2 cloves garlic
  • minced
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper
  • to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  3. Add the ground beef to the skillet, cooking until browned. Drain excess fat.
  4. Stir in the diced tomatoes, beef broth, rice, oregano, paprika, salt, and pepper. Bring to a simmer.
  5. Transfer the mixture to a greased casserole dish, cover with foil, and bake for 25 minutes.
  6. Remove foil, stir in shredded cheddar cheese, and return to the oven uncovered for an additional 5-10 minutes until cheese is melted and bubbly.
  7. Let it cool slightly before serving.

This casserole can be customized with your choice of vegetables or spices. Leftovers will keep well in the refrigerator for up to 3 days.
