- 1 lb ground beef
- 1 cup long-grain white rice
- 1 can (14.5 oz) diced tomatoes

- 1 small onion
- finely chopped
- 2 cloves garlic
- minced
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and pepper

- 2 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the ground beef to the skillet, cooking until browned. Drain excess fat.
- Stir in the diced tomatoes, beef broth, rice, oregano, paprika, salt, and pepper. Bring to a simmer.
- Transfer the mixture to a greased casserole dish, cover with foil, and bake for 25 minutes.
- Remove foil, stir in shredded cheddar cheese, and return to the oven uncovered for an additional 5-10 minutes until cheese is melted and bubbly.
- Let it cool slightly before serving.
