- 1 whole chicken divided into 8 pieces or about 4 skin-on chicken breasts or 6 bone-in
- skin-on thighs
- 1 tbsp (12 g) kosher salt divided
- 1 tsp black pepper divided
- 3 tbsp (44 g) salted butter
- 1 cup (236 g) brown mushrooms halved
- 3 shallots diced
- 2 medium stalks celery chopped
- 3 cloves garlic minced
- 1 tbsp (4 g) dried or fresh sage minced
- 2 tsp dried or fresh parsley minced
- 1/4 cup (32 g) all-purpose flour
- 1/2 cup (120 ml) dry white wine
- 2 cups (480 ml) chicken stock
- 1 lb (454 g) baby yellow potatoes halved
- 1/4 cup cream
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken pieces with 1/2 tbsp kosher salt and 1/2 tsp black pepper.
- In a large oven-safe skillet, melt 3 tbsp butter over medium heat. Add the chicken, skin-side down, and sear until golden brown, about 5 minutes per side. Remove and set aside.
- In the same skillet, add the mushrooms, shallots, celery, garlic, sage, and parsley. Cook until the vegetables soften, about 4-5 minutes.
- Sprinkle the flour over the vegetables and stir, cooking for another minute.
- Pour in the white wine, scraping up the browned bits from the bottom. Let it reduce for 2-3 minutes.
- Add the chicken stock and bring to a simmer. Return the chicken to the skillet and nestle in the halved baby potatoes.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, until the chicken is cooked through and the potatoes are tender.
- Remove from the oven, stir in the cream, and adjust seasoning if necessary before serving.
Notes
For extra flavor, marinate the chicken with spices overnight. Serve with fresh vegetables or crusty bread to soak up the sauce.
