  • 2 tbsp fresh parsley

  • 1 tbsp fresh thyme leaves (or 1 tsp dried thyme
  • if fresh is unavailable)
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp lemon zest
  • plus 1 tsp fresh lemon juice
  • 1/2 tsp flaky sea salt
  • plus more to taste
  • 1/4 tsp freshly ground black pepper
  • plus more to taste
  • 1 oz crumbled feta cheese (optional
  • for serving)
  • 1 tsp toasted sesame seeds (optional
  • for garnish)

Instructions

  1. In a large bowl, combine the halved cherry tomatoes and thinly sliced shallot.
  2. Add the torn basil, chopped parsley, and thyme to the bowl.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, lemon zest, lemon juice, sea salt, and black pepper.
  4. Pour the dressing over the tomato mixture and gently toss to combine.
  5. If desired, sprinkle crumbled feta cheese and toasted sesame seeds on top before serving.
