Ingredients

- 2 cups plain Greek yogurt (0% or 2%)
- 1/3 cup low-fat cream cheese
- softened
- 3 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1 scoop vanilla protein powder (optional)
- Juice of half a lemon
- 1 cup graham cracker crumbs
- 2 tablespoons melted coconut oil or butter
- 1 tablespoon honey
- Fresh berries
- Optional: sugar-free fruit compote
Instructions
- In a mixing bowl, combine the Greek yogurt, softened cream cheese, honey or maple syrup, vanilla extract, protein powder, and lemon juice. Mix until smooth and well combined.
- In another bowl, mix the graham cracker crumbs, melted coconut oil or butter, and honey until the crumbs are evenly coated.
- In serving jars, alternate layers of the cheesecake mixture and the crust mixture, starting and ending with the cheesecake layer.
- Top each jar with fresh berries and, if desired, a drizzle of sugar-free fruit compote.
- Refrigerate the jars for at least 30 minutes to allow the flavors to meld and the cheesecake to set before serving.
