Ingredients

  • 5 tablespoons unsalted butter

  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 3 tablespoons cornstarch

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter until well mixed. Press the mixture into the bottom of a springform pan to form the crust.
  3. In a blender, blend the cottage cheese until smooth. Add eggs, sugar, vanilla, lemon zest, and cornstarch, and blend until well combined.
  4. Pour the cottage cheese mixture over the crust in the springform pan.
  5. Bake for 30 minutes or until the center is set and slightly jiggles. Let it cool before refrigerating for at least 4 hours.
