- 1.5 cups graham cracker crumbs
- 5 tablespoons unsalted butter

- 24 ounces small curd cottage cheese
- 3 large eggs
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- 3 tablespoons cornstarch
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter until well mixed. Press the mixture into the bottom of a springform pan to form the crust.
- In a blender, blend the cottage cheese until smooth. Add eggs, sugar, vanilla, lemon zest, and cornstarch, and blend until well combined.
- Pour the cottage cheese mixture over the crust in the springform pan.
- Bake for 30 minutes or until the center is set and slightly jiggles. Let it cool before refrigerating for at least 4 hours.
- Remove from the pan, slice, and serve chilled.
