- 1 cup jasmine rice
- 2 tablespoons vegetable oil
- 3 large eggs beaten
- 1 pound boneless skinless chicken breast diced
- Salt and black pepper to taste
- 1 tablespoon soy sauce
- 4 cloves garlic minced
- 1 cup mixed vegetables (peas carrots corn)
- 2 green onions chopped
- 1 tablespoon sesame oil
Instructions
- Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the beaten eggs to the skillet and scramble until fully cooked, then set aside.
- In the same skillet, add the diced chicken and season with salt and black pepper. Cook until the chicken is browned and cooked through.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Stir in the mixed vegetables and soy sauce, cooking until vegetables are heated through.
- Add the cooked jasmine rice and scrambled eggs back into the skillet, mixing everything well.
- Drizzle with sesame oil and sprinkle with chopped green onions before serving.
