Description

  • ½ tsp vanilla extract or paste
  • 113g unsalted butter, softened

  • 300g blueberries (fresh or frozen)
  • 50g granulated sugar (¼ cup)
  • 1 tbsp lemon juice
  • Pinch of salt

For Frying

  • Neutral vegetable oil (enough for 3 inches depth)

For Coating

  • Granulated sugar (as needed)

Instructions

  • 1. Activate Yeast

    Mix warm milk, sugar, and yeast. Let sit 5–10 minutes until foamy.

    2. Make Dough

    Add flour, eggs, salt, and vanilla. Mix until combined, then knead in butter until smooth and elastic.

    3. First Rise

    Cover dough and let rise for 1–2 hours until doubled in size.

    4. Shape Donuts

    Roll dough, cut into donut shapes, and place on a tray. Let rest 30–45 minutes.

    5. Fry

    Heat oil to 350°F (175°C). Fry donuts until golden brown on both sides. Drain on paper towels.

    6. Coat

    While warm, roll donuts in granulated sugar.

    7. Optional Filling

    Cook blueberries, sugar, lemon juice, and salt until thickened. Cool, then pipe into donuts.
