- 1 cup (240ml) half-and-half
- 2/3 cup (130g) granulated sugar
- 1/4 teaspoon salt
- 1 cup (80g) sweetened shredded coconut
- 2 Tablespoons (28g) unsalted butter
- softened to room temperature
- 1 teaspoon pure vanilla extract
- optional: 1/2 teaspoon coconut extract
- 1 and 1/2 cups (360ml) cold heavy cream
- 3 Tablespoons (20g) confectioners’ sugar
- 3/4 teaspoon pure vanilla extract
- optional for garnish: unsweetened coconut shavings

- or sweetened shredded coconut
Instructions
- Preheat your oven to 350°F (175°C) and prepare the unbaked pie crust in a pie dish.
- In a medium saucepan, whisk together the egg yolks, cornstarch, granulated sugar, and salt.
- Slowly add the coconut milk and half-and-half to the saucepan while whisking continuously.
- Cook the mixture over medium heat, stirring constantly, until it thickens and begins to bubble.
- Remove from heat and stir in the butter, vanilla extract, and shredded coconut until fully combined.
- Pour the filling into the prepared pie crust and smooth the top.
- Bake in the preheated oven for 25-30 minutes or until the filling is set and slightly golden.
- Allow pie to cool to room temperature, then refrigerate for at least 2 hours before serving.
- Prepare the whipped cream by beating the heavy cream, sugar, and vanilla extract until soft peaks form.
- Top the chilled pie with whipped cream and garnish with optional coconut toppings before serving.
