- 1 ½ pound boneless skinless chicken breasts
- 1 large onion
- chopped
- 3 carrots
- peeled and sliced into coins
- 2 celery stalks
- sliced
- 4 sprigs of fresh thyme
- 4 sprigs of fresh rosemary
- 3 garlic cloves
- minced
- 1 bay leaf
- Kosher salt
- Freshly ground black pepper
- 10 cups low sodium chicken broth
- 8 oz. egg noodles
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Add the chopped onion, sliced carrots, and celery on top of the chicken.
- Toss in the fresh thyme, rosemary, minced garlic, bay leaf, salt, and pepper.
- Pour the chicken broth over the mixture.
- Cover and cook on low for 6-8 hours or on high for 4 hours.
- About 30 minutes before serving, remove the chicken, shred it, and return it to the pot along with the egg noodles.
- Cook the soup until the noodles are tender.
- Adjust seasoning if necessary and serve hot.
Notes
For extra flavor, you can add a splash of lemon juice or some fresh parsley before serving.
