Ingredients

  • 8 ounces dried figs
  • 1 cup apple juice
  • 2 teaspoons lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Start by rehydrating the dried figs in apple juice for about 30 minutes until soft, then drain and mix with lemon juice.
  2. Preheat your oven to 350°F (175°C). In a bowl, combine all-purpose flour, whole wheat flour, baking powder, and salt; mix well.
  3. In another bowl, cream together unsalted butter and brown sugar until fluffy. Beat in the egg and vanilla extract, then gradually add the dry ingredients.
  4. Roll out the dough and cut into rectangles. Place a spoonful of the fig filling in the center of each rectangle and fold over, sealing the edges.
  5. Place the sealed fig bars on a baking sheet lined with parchment paper and bake for about 20-25 minutes until golden.

Notes
